Fried rice an incredibly easy rice dish stir fried in wok with vegetables and other ingredients such as soya sauce and chilli sauce. There are countless variations in preparing fried rice. These varieties are differentiated by the ingredients used such as veg fried rice, schezwan fried rice, tofu and many more.
Fried rice is a staple food in American Chinese cuisine usually done with using left over rice. The logic behind using left over rice is because the moisture in the freshly cooked rice will cause it to steam instead of fry.
Veg fried rice is one permanent choice of menu when we dine out in Chinese restaurant. But i like fried rice made at home than the restaurant one. Rice used in restaurant fried rice is Al dente but i like rice cooked and puffed well.
Veg fried rice recipe
Serves : 2-3Ingredients
Rice - 2 cups, cooked
Vegetables - 1 1/2 cup chopped mixed vegetable (carrot, french beans, capsicum, spring onion)
Soya sauce - 2-3 tbsp
Chilli sauce - 2 tbsp
Onion - 1 medium, sliced
Green chillies - 3-4, finely chopped
Ginger - 1 inch and Garlic - 5 cloves (or ginger garlic paste - half tbsp)
Pepper powder - 1 tsp
Oil - 3-4 tbsp
Salt to taste
Method
- In a frying pan, bring 3-4 tbsp oil to heat, add ginger garlic paste
- after the raw smell of ginger garlic paste goes away, add sliced onion and fry till they are translucent
- add chillies and saute for few seconds, add chopped vegetables and fry for 5 mins
- add soya sauce, chilli sauce and salt and mix well
- now add cooked rice , pepper powder and mix well and fry for just 1 min and serve hot
