Capsicum rice

Capsicum rice - a quick and easy rice dish with delicious flavor. This is a pan fried dish and can be made within 20 mins. Pan fried foods always stands out, especially the rice dishes.


I always try to make every rice dish pan fried so i can save my time and still satisfy my taste buds. Pan fried rice dishes tastes totally different from the one cooked in pressure cooker or in one pot.

Capsicum rice is my new try when i had no vegetables other than capsicum and its lunch time and still want to have decent yummy food! The significant ingredient here is dried fenugreek leaves. It totally infuses the food with its aromatic flavor. you can add half cup of fresh peas to make it more delicious. it was not available at home so i couldn't add.

This is just a variant rice recipe from usually made rice dishes. Thank god! Tweaking here and there always works for me! Try this yummy capsicum rice with curd added with just little salt and garam masala!

Capsicum Rice recipe

Serves -2

Ingredients

Cooked rice - 2 cups
Capsicum - 3/4 cup, chopped length wise
Green chillies - 2-3, slit
Garlic paste - 2 tsp
Dried fenugreek leaves / kasuri methi - 1 tbsp
Fennel seed - 1 tsp
Thick curd / yogurt - half cup
Red chilli powder - 1 tsp
Turmeric - 1 tsp
Oil - 2 tbsp
Salt to taste

Method

  1. In a frying pan/ wok, bring 2 tbsp oil to heat, on low flame add fennel seeds and dried fenugreek leaves/ kasuri methi, fry for 10 seconds
  2. add garlic paste and fry until the raw aroma of garlic goes away
  3. add chopped capsicum and slit green chillies and fry for a minute
  4. add thick curd / yogurt, turmeric, red chilli powder and salt, mix well, and simmer for about 2-3 mins
  5. now add cooked rice and mix well, cover the lid and let cook for a min or two on low flame
