Rava dosa or Instant Rava Dosa is a popular 'fast food' dish in India. This is one must dosa variety you see in every south Indian fast food chains. This simple recipe needs a quick preparation of semolina/ rava batter with little other ingredients.
Whenever, i go to restaurants my first choice is always rava onion dosa. This is the best instant food i have ever tasted. I love Rava dosa served in 'Upahar Darshini' ( a popular fast food chain in Karnataka located in Jayanagar, Bangalore )( If possible try once!).
This recipe i am sharing is actually rava onion dosa, you can omit the use of onions ( but tastes best if u use it).
Try Rava Onion Dosa with tomato-onion chutney or coconut chutney
Instant Rava dosa recipe
Serves : 6 dosasIngredients
Semolina/ rava - 1 cup (medium rava)
Rice flour - 1 cup
All purpose flour / maida -2 tbsp
Onion - 1 medium , finely chopped
Green chilli - 1-2, finely chopped
Ginger - half inch, grated
Pepper corns - half tsp
Coriander leaves - 1 tbsp, finely chopped
Butter milk or water - 4 cups approximately
Salt to taste
To temper
Oil - 1 tbsp
Mustard seeds - half tsp
Cumin seeds - half tsp
Curry leaves - 1 strand
Method
To prepare batter
- In a mortar and pestle, crush pepper corns.
- In a mixing bowl, add semolina/ rava, rice flour, all purpose flour /maida, chopped onion, chilli, ginger, coriander leaves and freshly ground pepper, salt to taste, mix well
- In a tempering bowl, bring 1 tbsp oil to heat, add mustard seeds, after mustard splutters add cumin seeds and curry leaves, saute for 2-3 seconds and add this tempering mixture to semolina/ rava mixture
- now add 4 cups of butter milk or water and make not too thin or not thick batter ( i have tried both using water and butter milk, liked the butter milk version). Keep aside for 20 mins (during this time you can make tomato-onion chutney)
To prepare rava dosa
- Heat the non stick pan on low to medium flame, grease pan with half tsp oil (with the use of small piece of cloth or piece of onion)
- using a ladle, pour rava dosa batter starting from outer part moving towards the center of pan (if you see small holes while pouring the batter, don't worry it is fine, this is how rava dosa is made. but make sure holes are smaller like in the pic above, if holes are bigger fill lightly with batter)
- spread 1 tsp oil on top and let it cook until the base turns golden brown (rava dosa takes more time than regular dosa)
- once rava dosa is ready fold it to half and serve immediately. ( i cook only one side, if you want you can roast both sides by flipping)
