A yummy crispy side dish made with just potatoes. Aloo fry is a very very easy lip smacking dish. It doesn't really require your much time and done with very little ingredients.
Potato is one vegetable that i would like to have them in any kind. it may be french fries, chips, curries, in sambar or just a boiled one, i love to have them all the time :)
I always prefer to have side dishes. they are quick and easy to prepare yet are tasty and healthy, as we use good amount of vegetables that are just enough cooked with very little other ingredients. When the main course turn down side dishes becomes hero! Aloo fry is one side dish that is always a super hit!
Aloo fry recipe
Serves : 2-3Ingredients
Potato - 3 medium sized, sliced or thinly chopped
Red chilli powder/ sambar powder- 2 tsp
Mustard seed - 1 tsp
Asafoetida - a pinch
Curry leaves - 1 sprig
Oil - half tbsp
Salt to taste
Method
- In a mixing bowl, add sliced potatoes, chilli powder/ sambar powder, salt and mix well. Keep aside for 2 mins
- In a frying pan, bring half tbsp oil to heat, add mustard seeds, after it splutters add curry leaves, asafoetida and potato mixture
- Mix well and fry for a minute or two
- now cover with lid and cook on low to medium flame for about 5-7 mins or until the potatoes are cooked and fried well.
