Aloo palya is a popular dish in Karnataka mainly used as Masala dosa filling. This is an easy food made with aloo and onions. One dish which is commonly prepared in every house in Karnataka.
Aloo palya is also taken with poori, chapati. And they are hugely used in bonda shops to make yummy 'aloo bonda'.
Ingredients
Aloo /potato - 2 medium sized
Onion - 1 medium sized, chopped
Green chillies - 4-5 finely chopped
Curry leaves - 1 sprig
Mustard seeds - half tsp
Urad dal - 1 tsp
Channa dal - 1 tsp
Turmeric powder - 1 generous pinch
Oil - 1 tbsp
Salt to taste
Method
- Wash potatoes, cut each potato to 4 pieces and boil the them in pressure cooker with 1 tsp salt and enough water for about 3 whistles (you can also boil the potatoes in a pan with enough water for 10-12 mins on high flame with lid on)
- after pressure settles down remove potatoes from hot water with the help of spoons and put it in normal water to stop potatoes from boiling and it also makes easy to peel the potatoes
- peel and mash the potatoes coarsely. if you forget to add salt while boiling you can add in this step ( i usually forget!)
- In a wok/frying pan, bring 1 tbsp oil to heat, toss in mustard seeds, after mustard splutters add urad dal and channa dal and bring them to light brown
- add chopped onion and fry till it turns to golden brown and then add chopped chillies, curry leaves and turmeric and fry for a min or two
- now add mashed potatoes, stir well and sprinkle just a handful of water, stir again and cover with lid and cook in sim for just 1 min. remove from flame
