Serves - 2Ingredients
Pumpkin - 2 cups, chopped to small dice
Green Chilli - 1, finely chopped
Mustard seeds - 1 tsp
Black seeds - 1 tsp
Curry leaves - 1 strand
Asafoetida - a pinch
Grated coconut - 1 tbsp
Coriander leaves - 1 tbsp
Oil - 1 tbsp
Method
- In a frying pan/wok, bring 1 tbsp oil to heat, add mustard seeds,after it splutters add black seeds, curry leaves, Asafoetida, finely chopped green chilli and saute for few seconds
- then add chopped pumpkin, salt to taste, saute well and fry for 5 mins
- now just sprinkle a handful of water, stir well and cover with lid and simmer for about 5-7 mins
- bring down from flame ,add grated coconut and coriander leaves
