A rice dish made with tomato and onion with flavorful spices that tastes delicious. This is a quick and easy south indian food that can be made when you are running short of time. I often prepare tomato bhath for lunch or dinner.
Tomato Bhath recipe
Serves : 3-4
Ingredients( 1 cup-250 ml)
Rice - 1 cup
Tomato - 2 medium sized, chopped
Onion - 1 medium sized, chopped
Garlic - 4
Ginger - half inch
Sambar powder - 2 tsp
Red chilli powder - half tsp
Pepper powder - half tsp
Coriander - 2 tbsp, finely chopped
Oil - 2 tbsp
Salt to taste
Spices
Cinnamon - 1 inch
Cloves - 3
Bay leaf - 1 small
Method
- Rinse rice very well and soak for about 30 mins
- Crush ginger and garlic in pestel
- In a cooker, bring 2 tbsp oil to heat and add whole spices and fry till they are fragrant
- add finely chopped onion and fry till golden brown
- add ginger garlic paste and fry for a minute
- then add finely chopped tomatoes and saute till they are soft and mushy
- now add sambar powder, red chilli powder, pepper powder and saute for 2 mins
- then add rice and saute for a min
- now add 2 cups of water, salt to taste and pressure cook for 3 whistle
- then add chopped coriander leaves and serve hot
