This is the best recipe for busy home cook. I usually make this simple veg pulav when i don't have much time in hand and still want a comfort and tasty food.
Pulavs are always quick and easy yet tasty food. Just add in all the ingredients and pressure cook for some time.
Try this simple vegetable pulav with tomato raita or cucumber raita.
Vegetable Pulav recipe
Serves : 3Ingredients (1 cup - 250 ml)
Rice - 1 cup
Vegetables - 1 cup (includes chopped beans, carrot, soya beans, peas, potato)( can include any vegetables of your choice)
Onion - 1 medium, Sliced
To grind
Coriander leaves - half cup, roughly chopped
Pudina - quarter cup, roughly chopped
Green chilli - 6
Onion - 1 small, roughly chopped
Garlic - 5 clove
Ginger - 1 inch
Cinnamon stick - 1 inch
Cloves - 3
Star anise - 1
To temper
Cinnamon stick - 1 inch
Clove - 2
Star anise - 1
Bay leaf - 1 small
Oil - 2 tbsp
Method
- Wash rice well and soak for about 30 mins
- In a mixer, add coriander leaves, pudina, chilli, onion, garlic, ginger,cinnamon stick, cloves, star anise along with 3 tbsp water grind it to fine paste
- In a pressure cooker, bring 2 tbsp oil to heat, add all the spices listed below 'To temper' and fry for a min or until they become fragrant
- add sliced onions and fry till they are translucent
- now add whole vegetables and fry for 2 mins
- add grounded paste, stir well and fry for 5 mins
- now add soaked and drained rice and fry for a min
- then add 2 cups of water, salt to taste and pressure cook for 3 whistles.
